Our farm owns 6 hectares of olive trees, with 300 very ancient trees and 4 hectares of relatively young plantations .
The olive groves are a mix of different, traditional, Sicilian varieties: Tonda Iblea, Moresca, Biancolilla, Nocellara del Belice, Ogliarola Messinese.
Amidst our old fields we also have a small production of “Leucolea”, an ancient variety of completely white olives that produce a very light-colored oil. From history we know that it was used to anoint emperors and as a sacred oil in numerous Greek Orthodox religious functions.
The new olive groves were planted in the year 2000, 2007, 2009 and 2020.
We harvest by hand from mid-October to mid-November and bring the olives daily to the oil mill. Extraction system by continuous cold cycle.
The processing of the olive tree, like that of the vine, follows a precise and severe production cycle even after harvesting.
Thanks to an attentive monitoring of the olive tree and the production cycle, it is possible to obtain a very high-quality oil with strong antioxidant properties, refined organoleptic characteristics and an extraordinary intensity of taste.
The “Tonda Iblea” olive is pressed separately, to produce a very delicate oil. It is a typical variety of our region , with a flavor of tomato leaves and the scent of freshly cut grass.
